Clementine Cake

As promised yesterday, I used the clementine jam in a recipe adapted from The New York Times: Orange Marmalade Cake. I substituted the clementine jam and used clementine peel and juice exclusively. Instead of a loaf tin, I used a cupcake tin 🌞.

Voila!

    Let me introduce myself. I’m Deborah. My dad, David, is away for work, so I’m tending to his blog. I thought I’d write a couple two, three posts, max. It seems I’m writing a lot more. Dad says you’re one of the nicest persons he’s met in the blogging world. He’s right, of course. He’ll want me to ask how you are doing, if you have recovered from your fix-it. The other is how is Bagheera. Our black kitty, Midnight, is in the early stages of kidney disease. She is doing well, appetite is good, which really matters being 17. Our Midnight still has plenty of sass.

    1. Good morning Deborah, thank you so much for your lovely note! I am doing well and grateful that I am recently retired…I am able to devote most of my time to my beloved Bagheera. He is in the final stages of his earthly life as his cancer is progressing. We must make a decision soon regarding end of life care…I am cheered by the news that Midnight has good quality of life as she faces kidney disease. She is a beautiful, sweet kitty.
